Sandals Resorts is rolling out a new collection of food and beverage concepts across three properties in Jamaica as part of a $200 million transformation. Sandals Montego Bay and Sandals Caribbean Cay open Dec. 18, 2026; Sandals South Coast reopens November 18, 2026.
At Sandals Montego Bay, the arrival experience sets the tone immediately. BLUM coffee shop will serve the island’s Blue Mountain coffee from the lobby, alongside a new lobby bar. The Bay Roc Rum Bar pays tribute to Bay Roc Hotel & Villas—the 1950s predecessor to the current resort—with murals by local artists, memorabilia and a curated vinyl collection. Buccan makes its Jamaica debut here as a solid-fuel family-style restaurant, guiding guests through the island’s parishes with open-fire cooking and communal tables. Parisol Beach Club anchors the beachfront with a swim-up pool bar, Jerk Shack and made-to-order pizza counter. Scrimshaw brings fresh seafood and wraparound ocean views, while Tesoro transitions from global fare by day to Italian by night. Butch’s Island Chop House and Soy return.
Sandals Caribbean Cay introduces Suppa, a supper-style concept modeled on the Jamaican tradition of gathering for Sunday dinner. Structured around a shared set menu in intimate, home-style spaces, the experience is designed to feel personal. The Keynote Rum Bar leads guests into Suppa’s parlor-like atmosphere, offering premium Caribbean rums and culturally rooted snacks. Parisol Beach Club will also open on Sandals Cay, the resort’s private offshore island accessible only by boat.
“Caribbean food is having a moment right now,” said Luke Mathot, Vice President of Product Innovation, Food & Beverage, in a press statement. “We’re taking inspiration from dishes that have been part of Jamaican culture for generations and interpreting them through a contemporary lens. A rice and peas risotto at Suppa is a great example—it’s unmistakably Jamaican, but presented in a way that is fresh and unexpected. Authenticity doesn’t always mean traditional, and we’re continuing to find new ways to celebrate the region’s flavors, stories and ingredients.”
At Sandals South Coast, Butch’s Island Chop House makes its south coast debut, paired with a dedicated martini bar, while BLUM will serve local coffee and fresh-baked pastries. The B-Side Rum Bar—a second-story lounge featuring craft cocktails and small plates—is slated to open in early 2027.
